Irish-style red ales range from light red-amber-copper to light brown in color. These ales have a medium hop bitterness and flavor. They often don't have hop aroma. Irish-style red ales have low to medium candy-like caramel sweetness and a medium body. The style may have low levels of fruity-ester flavor and aroma. Diacetyl should be absent or at very low levels.

Tun Tavern Devil Dog Pale Ale PictureAmerican pale ales range from deep golden to copper in color. The style is characterized by fruity, floral and citrus-like American-variety hop character producing medium to medium-high hop bitterness, flavor, and aroma. Note that the ―traditional style of this beer has its origins with certain floral, fruity and citrus-like American hop varietals. One or more of these hop characters is the perceived end, but may be a result of the skillful use of hops of other national origins. American pale ales have medium body and low to medium maltiness. Low caramel character is allowable. Fruity-ester flavor and aroma should be moderate to strong. Diacetyl should be absent or present at very low levels. Chill haze is allowable at cold temperatures.

Golden or Blonde ales are straw to golden blonde in color. They have a crisp, dry palate, light to medium body, and light malt sweetness. Low to medium hop aroma may be present but does not dominate. Bitterness is low to medium. Fruity esters may be perceived but do not predominate. Diacetyl should not be perceived. Chill haze should be absent.

Oatmeal stouts include oatmeal in their grist, resulting in a pleasant, full flavor and a smooth profile that is rich without being grainy. A roasted malt character which is caramel-like and chocolate-like should be evident — smooth and not bitter. Coffee-like roasted barley and roasted malt aromas (chocolate and nut-like) are prominent. Color is dark brown to black. Bitterness is moderate, not high. Hop flavor and aroma are optional but should not overpower the overall balance if present. This is a medium- to full bodied beer, with minimal fruity esters. Diacetyl should be absent or at extremely low levels. Original gravity range and alcohol

All-American IPA
The aroma and flavor of a Weissbier with yeast is decidedly fruity and phenolic. The phenolic characteristics are often described as clove- or nutmeg-like and can be smoky or even vanilla-like. Banana-like esters should be present at low to medium-high levels. These beers are made with at least 50 percent malted wheat, and hop rates are quite low. Hop flavor and aroma are absent or present at very low levels.

Belgian-Style Tripel (Belgian Triple)
Tripels are often characterized by a complex, sometimes mild spicy character. Clove-like phenolic flavor and aroma may be evident at extremely low levels. Yeast-generated fruitiness, including banana esters, are also common, but not necessary. These pale/light-colored ales may finish sweet, though any sweet finish should be light. The beer is characteristically medium and clean in body with an equalizing hop/malt balance and a perception of medium to medium high hop bitterness.

Gose is a top-fermented beer that originated in Goslar, Germany. It is brewed with at least 50% of the grain bill being malted wheat. Dominant flavours in Gose include a lemon tartness, a herbal characteristic, and a strong saltiness (the result of either local water sources or added salt). Gose beers typically do not have prominent hop bitterness, flavours, or aroma. Gose belongs to the same family of sour wheat beers which were once brewed across Northern Germany and the Low Countries. Other beers of this family are Belgian Witbier, Berliner Weisse, Broyhan, Grätzer.

American-Style Barley Wine Ale

American style barley wine: amber to deep copper-garnet in color; full body and high residual malty sweetness; Complexity of alcohols and fruity-ester characters are high and counterbalanced by assertive bitterness and extraordinary alcohol content. Hop aroma and flavor are at medium to very high levels. A caramel and/or toffee aroma and flavor are part of the character. Aged on rum soaked French oak, generously dry hopped with American Cascade hops.
OG: 28, FG: 6.7, IBU: 70, ABV% 11.0

Brewmaster Tim Kelley Brewmaster Tim Kelly began homebrewing in Vermont in 2000. After completing the Brewing Science & Engineering course conducted by the American Brewers Guild, he began working at Flying Fish Brewery in Cherry Hill, NJ where he worked his way up to Assistant Brewer. Tim began working at the Tun Tavern in 2007.  Tim's talents and enthusiasm for the beer making process have been instrumental in the rave reviews Tun Tavern has received for our beers over the years.  Tim's Pumpkin Ale and Summer Wheat Beers (Hefeweiss) are so popular each year, customers ask for them months in advance.  We hope you will come in soon and sample Tim Kelly's latest creation!
